Zucchini Chicken Noodles
– 1 zucchini
– 120-150gr chicken breast
– 1 lemon
– fresh coriander
– 4 olives (chopped)
– coconut oil
– Italian herb mix , dill, salt, pepper
– a few pine nuts and goji berries
Optional: A spoon of green pesto
For the zucchini noodles you will need a “spirelli” kitchen tool
With the spirelli kitchen tool, make the zucchini noodles, sprinkle them with lemon juice and put it aside.
Cut the chicken in to small pieces, put it in a bowl and squeeze the lemon juice from ½ lemon into it, add salt, pepper, Italian herbs and dill and let it marinate for a few minutes.
In a wok, heat up a little coconut oil and add the noodles. Add the olives and heat for just a minute so the noodles soften then sprinkle some more lemon juice over them, take them out and put them on the dinner plate. In the wok, add a little more coconut oil and add the chicken, cook it for a few minutes, pour the left over lemon juice and herbs over it and cook until it becomes golden brown, optionally you can mix in a spoon of pesto.
Put the chicken over the noodles. Add the coriander, pine nuts and goji berries. Season with some more dill and sprinkle with a little more lemon juice. Done!
